To those of us lactose intolerant.
Rejoice.
I learned from the godfather of cheese in Sonoma we can eat cheese.
Ig Vella, the maker of great cheese at Vella Cheese Co., informed me that lactose ages out naturally in cheeses aged over 90 days.
I have been enjoying great cheeses for many years since that day in which I skipped out with joy (I didn’t have anyway of telling people).
Now I make gourmet grilled cheese, omelets, eggs.

I’m surprised the American Dairy Assoc. doesn’t pick up on this.
It would be good for business. Bring the lactose-intolerant back into the fold…
Lactose-free cheese?
Hell, lactose free milk takes up a few facings at every store (meaning they make money serving the lactose free or they would get no facings).
